An Extension of the Plate and the Expansion of your Palate
In Italy, food is always served with wine and my belief is that wine should ideally be an extension of the plate as an accompaniment to what you are eating. So here at Taormina Sicilian Cuisine, we have assembled a sampling of the best wines to match the flavors and textures of our menu. In order to do so, we must look at the wines and culture that evolved hand in hand with the cuisine of Italy. As such, we have chosen many of the indigenous varietals and wines of Italy, some that you may not recognize by name. But what makes them easier to understand especially when you taste them is their place in the culture. Think of the village that makes the wine and the cuisine that surrounds it, if they didn’t match, they would probably grow different grapes and made different wines. When you see it from this point of view, the experience of having a different wine can expand your palate.
